Roasts, broils/bakes, steams, and stews meats, fish and poultry. Prepares soups, sauces, stocks, broth, and gravies. Follows standardized recipes and cooking techniques and adjusts standard recipes for the number of servings/portions required in large quantity cooking. Maintains proper temperature for all food items. Adheres to safety and sanitary standards throughout all phases of food preparation and cooking. Serves on dining hall line and patient hot food assembly. Works on dining hall line, grilling, frying and serving. Assists in cold diet section in preparation of liquid nourishment, and in the hot diet section, chopping meats, blending foods, broiling, meats, etc. Prepares and serves salads, salad dressing, and simple desserts. Maintains a clean work area. Assists higher level cooks in preparation of any items on menu.
